'Tis the season for making New Years Resolutions: Setting goals! Dreaming big! Evaluating the past and feeling inspired for the future! The goal of trying to loose weight in the new year is so cliche... yet it speaks to a deeper issue we ALL are facing:

Perhaps I have lured you here with the promise of this incredible "Brussels Sprout Hash with Miso-Apple-Cider-Vinegar Dressing" recipe, but if you don't mind, first I would like to ask you a few questions:

Why is this meal good for your body?
What the heck are these ingredients, and should you buy them?
How can you encourage your family to eat healthy things, like this?

Oh yes, and here is that Brussels Sprout Hash recipe...
This should take 15 minutes to prepare - max!!! A perfect addition to your holiday table :).
Holiday Feast Brussels Sprout Hash
1/2 lb brussles sprouts (about 15 - 20)
1 can chick peas
1/2 cup pomegranate seeds
2-3 cloves of garlic
1 tbsp EVOO
S&P
Miso-Apple-Cider-Vinegar Dressing
2 tbsp white miso
2 tbsp tahini
2 tbsp apple cider vinegar
3 tbsp EVOO
1 tsp dijon mustard
S&P to taste
Prep your ingredients: Trim brussels sprouts, de-seed pomegranate, chop garlic, and drain chick peas.
Make dressing by combining all ingredients in a mason jar or a small bowl, and stirring together with a whisk or a small spoon.
In a food processor, slice/shred brussels sprouts on high speed. Heat a large skillet on medium high heat, add 1 tbsp EVOO and warm until you can feel the heat of the oil and it glistens in the pan. Add shredded brussels sprouts, garlic, and chick peas. Toss for 2 minutes, until ingredients soften just a bit and are heated through.
Transfer to a large serving bowl, toss with dressing and top with pomegranate seeds.
Serve along side roasted, sliced sweet potatoes: preheat oven to 425 degrees, slice sweet potatoes into thick slices and transfer to a foil lined baking sheet - drizzle with EVOO, S&P. Roast for 20 minutes, flipping the slices halfway through.
OR alongside an animal protein of your choice.
