tried and true - zucchini bread

Hello friends :).  I hope you enjoyed breakfast week here on the blog!! We are going to tie this week up with a tried and true favorite of mine: warm, comforting, delicious Zucchini Bread

Nutritious food is a crucial component of a healthy lifestyle - but just eating kale and goji berries all the time is not going to make you full of joy and peace.  Health is holistic.  Your physical body is affected by your work and home environment, the stressors you encounter, the relationships you invest in, and your spiritual practice.

This Zucchini Bread is nourishing in ways that go beyond vitamins and fiber.  It is an expression of investing in yourself, and enjoying the experience of food. Antonia Trichopoulou, expert on the Mediterranean diet says "What dieters forget is that eating is one of the greatest pleasures of the living." So lets enjoy it :).

I first came upon this recipe in February, right after our third child was born. I was fresh out of cheerios and milk, and I was dreading having to go out to the store (or even to Starbucks) in the morning in the cold (so many jackets!! so much slushy snow!! I couldn't find the warm socks!!) The only thing I had left in the fridge was 1 egg, 2 zucchinis, and butter.  Making zucchini bread held the promise of solving all my future problems.....

Since that fateful day, this recipe has evolved and changed - adding in more nutritious ingredients, and perfecting the technique of a crispy top crust. I'm pretty sure I have brought this bread to every bridal shower I have hosted, and every class party I helped throw.  It is still my go-to when I need breakfast in a pinch.

Avocado toast might no longer be in vogue next year, and we might be super bored with acai bowls - but I'm sure I will still be baking this zucchini bread.

Of course, you love keeping up with the latest food trends. It is fun and invigorating to try something new :).  Part of your health journey is discovering the foods that make your body feel its best, and enjoying fresh new foods are part of that discovery!  But keep in mind - when you are trying to form new healthy habits, or striving get your health back on track - you need foods in your diet that are consistent, stress free, and comforting so you don’t fall off the bandwagon when your schedule gets hectic or when you have a disappointing day.

Below is the recipe that I baked this morning, and the original zucchini bread recipe that I made years ago.  Notice how the ingredients and portions have changed to add more nutrients! You can do this too :).

Zucchini Bread 2017

  • ½ C butter

  • ½ C brown sugar

  • ⅓ C greek yogurt

  • 1 ½ C whole wheat flour

  • 2 tbsp flax seed meal

  • 1 tsp cinnamon

  • ½ tsp baking soda

  • 1 tsp baking powder

  • 1 egg

  • 1 C finely shredded zucchini

Preheat oven to 350 degrees. Combine butter and brown sugar in the bowl of an electric mixer, cream the mixture until smooth. Keeping the mixer on med-high, add egg and then yogurt. Add dry ingredients and mix until incorporated.  Add zucchini and mix together well. Bake for 55 min on the rack in the middle of the oven. If you are able to be patiently wait, let cool for 10 min. Otherwise, just slice and enjoy!

Zucchini Bread 2010

  • ¼ C butter

  • ¼ C vegetable oil

  • 1 C brown sugar

  • 1 ½ all purpose flour

  • 1 tsp ground cinnamon

  • Pinch of nutmeg

  • ½ tsp baking soda

  • 1 tsp baking powder

  • ½ tsp salt

  • 1 egg

  • 1 C finely shredded zucchini

  • ½ C toasted walnuts

Preheat oven to 350 degrees.Combine wet ingredients in the bowl of an electric mixer.  Cream the mixture until smooth.  Add dry ingredients and mix until incorporated.  Add zucchini and mix together well, add in walnuts. Bake for 45 min, let cool for 10 min before serving.
